Anchovy Sauce

- ½ pint of basic white sauce (see White Sauce)
- Anchovy essence or paste
- Salt
- Pepper
- Make half a pint of basic white sauce, without the seasoning.
- Simply add the salt, pepper and anchovy essence/paste to taste.

Anchovy Butter

- 2 oz. butter
- Lemon juice
- Desert spoon of anchovy essence or paste.
- Warm the butter until it is soft and resembles very think cream.
- Beat in the anchovy essence / paste until it is evenly mixed.
- A drop of lemon juice adds a pleasant tang to the butter, but is optional.
