Orange Basting Sauce

- ½ cup orange marmalade
- 1 orange, peeled, pipped and cut into small pieces
- ¼ cup white wine
- 1 tablespoon honey
- 1 teaspoon Worcestershire sauce
- In a small saucepan over low heat cook the marmalade, chopped orange, white wine, honey, and Worcestershire sauce, stirring occasionally, until the marmalade is melted.
- Spread over grilled meats whilst they are cooking.

- ½ pint of white sauce
- 1 orange
- Make a basic white sauce - complete with seasoning (see White Sauce)
- Peel the orange, remove pith and pips, and cut the remainder into very small pieces.
- While the white sauce is still warm, add the orange pieces with a little grated orange rind.
- Re heat the sauce, but do not allow it to boil.
- Serve.

- ½ pint of white sauce (see White Sauce - but don't add the salt and pepper)
- 1 orange
- 4 oz. granulated sugar
- Make a basic white sauce without seasoning, and with the rind of the orange added to the milk to add flavour.
- Add the sugar, stirring well, and bring to the boil for a few seconds.
- Remove from the heat and after allowing the sauce to cool for 2 minutes, add the orange juice to taste.
- Serve.
