Lemon Sauce 01

- ½ pint of white sauce (see White Sauce - but don't add the salt and pepper)
- 1 lemon
- 4 oz. granulated sugar
- Make a basic white sauce without seasoning, and with the rind of the lemon added to the milk to add flavour.
- Add the sugar, stirring well, and bring to the boil for a few seconds.
- Remove from the heat and after allowing the sauce to cool for 2 minutes, add the lemon juice to taste.
