Tomato Sauce 01

- 1 lb of tomatoes (canned or fresh)
- 1 bacon bone or a few bacon rinds
- 1 small onion
- 2 level teaspoons of sugar
- 1 oz. butter
- In a saucepan, melt the butter and add the tomatoes.
- Add the bacon rinds or bacon bone, the sugar and the onion.
- Stir well whilst cooking slowly, until tender.
- Rub the mixture through a sieve.
- If the sauce is too thick, add a little milk.
- Add salt and pepper to taste.
