Veloute Sauce

Veloute Sauce
Difficulty: Easy
  • ½ pint of chicken stock
  • 1 tablespoon of flour
  • 1 oz. butter
  • A little cream
  • Pepper
  • Salt
  • Squeeze of lemon juice
  1. Mix the flour with a little of the stock to form a smooth paste.
  2. Put the rest of the stock in a saucepan, heat well, then add the paste.
  3. Add salt and pepper.
  4. Simmer for 5 minutes
  5. Add the butter, a little cream and the lemon juice just before serving. Do NOT let it boil.
  6. Serve
