Wine Foam Sauce

Wine Foam Sauce

Ingredients
  • 1 egg
  • 1 dessertspoon of sugar
  • 1 strip of lemon peel
  • ¼ pint of sherry or marsala
Instructions
  1. Slightly warm the sherry in a heat proof basin.
  2. Add all the other ingredients to the sherry.
  3. Put the basin over a pan of hot water.
  4. Whisk well for 10 minutes or until the sauce has a froth on it.
  5. Be careful not to heat too much as the sauce will curdle.
  6. Serve and eat at once.
